Paley., a new, sophisticated, power restaurant in Los Angeles, is a class act, living up to its’ name.
Paley. is named in celebration of the artistic and innovative era shaped by CBS CEO and visionary William S. Paley and his divine wife, Babe.
The Hollywood based restaurant is located in the new Columbia Square complex, adapted from what was built as the original headquarters of CBS Radio in 1938.
Paley. is run by the Tokyo-based Plan Do See group, which maintains restaurants around the world.
The chef is Greg Bernhardt, who has worked on and off with Ludovic Lefebvre since his L’Orangerie days and was the opening chef at both Church & State and Perch in Los Angeles
With a sweeping Art Deco-inspired design by Bishop Pass, along with input from owner-operator Plan Do See, Paley. is impressive.
We recently sampled the brunch fare.
The place was subdued due to the holiday weekend.
We were able to absorb the mid-century decor and chat with the highly professional, outgoing staff.
We had a great time talking to restaurant and beverage manager, Benjamin Ferguson.
What a lovely man whose enthusiasm about Paley. is contagious.
I toasted the long weekend with a fabulous pale rose.
Believe it or not it is from Chateau Miraval winery in Provence…translation it is another successful production from Brad Pitt and Angelina Jolie. I kid you not and despite not wanting to like it, I really did ($15).
We started with a uniquely delicious Sweet Gem Salad with red onion, nori and ginger vinaigrette. The nori added a flavorful, distinctive twist. ($12).
We shared a delectable Pan Seared Salmon with heirloom tomatoes and fennel provencal ($22).
The charming manager sent over the most incredible dessert with delicate beignets, apples, caramel sauce and fresh whipped cream.
I look forward to enjoying dinner at this historic revelation.
