Queen E. made the best Matzo Meal Pancakes…a variation on latkes.
Even the dreidel spun out of control over her holiday delight.
Being a fabulous human being, I am ready to share.
Queen E’s Matzo Meal Latkes
- 1/2 cup Matzo Meal
- 4-5 Eggs
- 1/2 cup Milk
- Salt and pepper to taste
- Butter
Beat eggs, add milk, salt, pepper and 1/2 cup Matzo Meal.
Mix until you achieve a medium thickness.
Refrigerate for a minimum of 30 minutes.
Remove from refrigerator and check thickness.
If too thick, add water or milk for medium consistency.
Heat skillet, add butter and spoon in tablespoon size portions of mixture.
Cook on both sides until golden brown.
Makes 20-25, 2 inch latkes.
Serve with warm maple syrup or sugar or with smoked salmon, caviar and a dollop of creme fraiche or sour cream.
Perfectly delicious for any meal and a wonderful tradition!
