Magic Mushrooms…

It’s Passover.

Time for the 4 Questions.

I did a drive by at the local grocery store and found a lovely medley of California grown fresh mushrooms including a Shitake, Crimini and Oyster blend.

I did a deep dive into a diverse range of mushroom sauce recipes.

Many were cream based. Others consisted of complicated roux recipes.

I decided to take my own path.

I wiped off the mushrooms and sliced them lengthwise.

I melted a teaspoon of butter and added fresh ground pepper and kosher salt over a medium flame.

Next I sautéed half a diced shallot until it turned golden.

I added the mushrooms and stirred until they started to cook through and added another teaspoon of butter.

After the butter melted I poured in a 1/4 cup of dry white wine (Sauvignon Blanc) and let it reduce.

As it reduced I sprinkled in a tablespoon of flour and stirred until the flour completed dissolved and did its job of thickening the sauce

I took the mushrooms off the stove and boiled up salted water and added Farfalle or Bow-Tie pasta and cooked on a high flame for 12 minutes (yes I cheated and consumed flour, but I was observant for the 2 Seder nights and my mother did not pass over with any heavenly guilt).

I drained the pasta reserving 1 cup of pasta water.

I placed the mushrooms over a medium flame again and added a little less than a 1/4 cup of pasta water and let it reduce.

I than added fresh corn that I cut off the cobb and cooked mixture for 1 minute.

I tossed the mushroom mixture in a saucepan along with enough pasta for 2 servings and stirred over a medium flame adding some freshly grated Parmesan cheese.

Ta-da…I served the Magic Mushroom Pasta and garnished with additional freshly grated Parmesan cheese.

Fabulosity!

BTW, I am in love with my new stainless steel pans after my daughter extolled their virtues. They clean up easily and I bought a duo set on Amazon for $29…such a deal.
