Honey, I Sauteed the Shrimp…


Shrimp…a frequent dinner guest.

Some dream of escaping to paradise.

I dream up dinner menus.

Here is my latest fantasy.

Ingredients for 2 servings (prep time 10 minutes):

  • 1/3 cup honey
  • 1/4 cup soy sauce (I use reduced sodium)
  • Diced shallots
  • 1 tablespoon minced fresh or pickled ginger
  • 2 teaspoons olive oil
  • 1 tablespoon Worcestershire sauce
  • 12 medium or large uncooked shrimp, peeled & deveined
  • Whisk all ingredients except shrimp together in a medium size bowl
  • Place shrimp in a large zipped-top bag. Pour 1/2 of the marinade mixture on top, give it all a shake, then allow shrimp to marinate in the refrigerator for at least 30 minutes or for up to 8-12 hours. Cover and refrigerate the rest of the marinade.
  • When ready to sauté place shrimp individually in the skillet. (Discard used marinade.) Cook shrimp on one side about 1 minute– then flip shrimp over.
  • .
    Pour in remaining marinade and cook until shrimp is cooked through, about 3-4  minutes.
  • Add 1 cup steamed broccoli and sliced sauteed Bok Choy (cook in a teaspoon EVOO for 5 minutes in a separate pan) or any desired vegetables and stir.
  • I roasted nuts covered with honey over a high heat for 2 minutes and topped mixture when ready to serve with the nuts (cashews, peanuts, walnuts).
  • Another easy, inexpensive, quick and delicious meal.
