Shrimp…a frequent dinner guest.
Some dream of escaping to paradise.
I dream up dinner menus.
Here is my latest fantasy.
Ingredients for 2 servings (prep time 10 minutes):
- 1/3 cup honey
- 1/4 cup soy sauce (I use reduced sodium)
- Diced shallots
- 1 tablespoon minced fresh or pickled ginger
- 2 teaspoons olive oil
- 1 tablespoon Worcestershire sauce
- 12 medium or large uncooked shrimp, peeled & deveined
- Whisk all ingredients except shrimp together in a medium size bowl
- Place shrimp in a large zipped-top bag. Pour 1/2 of the marinade mixture on top, give it all a shake, then allow shrimp to marinate in the refrigerator for at least 30 minutes or for up to 8-12 hours. Cover and refrigerate the rest of the marinade.
- When ready to sauté place shrimp individually in the skillet. (Discard used marinade.) Cook shrimp on one side about 1 minute– then flip shrimp over.

Pour in remaining marinade and cook until shrimp is cooked through, about 3-4 minutes. - Add 1 cup steamed broccoli and sliced sauteed Bok Choy (cook in a teaspoon EVOO for 5 minutes in a separate pan) or any desired vegetables and stir.
- I roasted nuts covered with honey over a high heat for 2 minutes and topped mixture when ready to serve with the nuts (cashews, peanuts, walnuts).
- Another easy, inexpensive, quick and delicious meal.
