I am a Salmon fan.
It is delicious and good for you.
But, it always overstays its welcome.
I have tried everything to rid its presence, but to no avail…exhaust fan, candles, room deodorizer, plug ins, wide open windows and doors.
So I found a cooking compromise.
Bake and roast and step away from stovetop pan searing.
The following is my attempt at delicious salmon detente.
Baked Salmon with Mayo/Horseradish and Parmesan Crust
Prep time: 5 minutes
Serves 2
Ingredients:
1lb. Salmon Fillet or 2 8oz. fillets with skin on, Mayo, Horseradish, Panko, Parmesan Cheese, Kosher Salt, Ground Pepper
- Preheat oven to 450 degrees
- Using a paper towel, dry salmon fillet.
Place fillet on a baking sheet covered with parchment paper or in a Pyrex dish with nonstick spray. - Mix 1 tablespoon mayonnaise with 1 tablespoon horseradish and spread over the top of the salmon fillet. Sprinkle with 2 tablespoons Panko for 1 fillet or 2 smaller, 2 tablespoons freshly grated parmesan cheese, kosher salt and ground pepper. I did push back on cooking with Mayo, but it works. BTW, I strongly recommend Best Foods or Hellmann’s Mayo, only!
- Bake in the oven for approximately 15 minutes, or until fish flakes easily with a fork and the topping is golden brown.
- Squeeze fresh lemon juice over the salmon.
- I serve with baked potato stuffed with corn sautéed with shallots and a dollop of sour cream on the top of the potato.
- Enjoy a delectable, unsmelly, healthy Omega-3 fatty acid meal.
