Scampering For Shrimp…


I was so excited to hear from President Obama that I scampered into the kitchen and tweaked a bunch of recipes and created my own version of Shrimp Scampi.

Ingredients

2 Tablespoons EVOO

3  Tablespoons  butter…you can use more if you prefer it buttery.

1 large shallot. I never cook with garlic. Feel free to use garlic, shallots, onions whatever floats your boat

16 large raw shrimp (feeds 4)

Kosher salt and fresh ground black pepper to taste

1/4 cup dry white wine 

Red chili pepper flakes to taste (optional)

2 Tablespoons lemon juice

2 Tablespoons of dried basil or parsley.  I don’t like parsley, but have at it.

Parmesan cheese

Cooking Instructions

Sauté the shallots or garlic in EVOO and 2 tablespoons butter for 2-3 minutes.

Add salt and pepper.

Add the shrimp.

Saute shrimp for 2-3 minutes on each side or turn when shrimp appear opaque.

Add wine.
Sprinkle in red chili pepper flakes.
Lower heat for 2-3 minutes or until wine reduces by half.
Stir in the remaining butter, squeeze in lemon juice from 1 fresh lemon, sprinkle dried basil (fresh basil, parsley).
After 2 minutes take off the stove.
After cooking and draining pasta (1/4 cup reserve pasta water) I toss pasta back into pasta pot with shrimp scampi sauce and heat and stir for 1-2 minutes. Add a 1/4 cup of pasta water into the scampi.
You can serve the Shrimp Scampi over pasta, rice, steamed vegetables.
Top with grated Parmesan cheese.
