My new snack and meal accessory.
Green beans!
Everyone sells them now in microwaveable bags.
Do not follow the directions.
2 minutes in the microwave is plenty unless you delight in mushy vegetables.
I like my veggies crisp and to snap back.
Throw them into salads, snack on the jolly green things, serve them as a side dish either naked or sauté with a bit of butter or EVOO, mix with sautéed onions, shallots, garlic, sprinkle Coconut Amino or soy on them.
BTW, coconut aminos is a common substitute for soy sauce that is both gluten-free and soy free. It’s made from the sap of the coconut palm. But it doesn’t taste like coconut…it’s a milder version of soy sauce that contains a lot less salt.
Try browning almond slivers in a naked, hot pan for a few minutes until they take on a bit of char. Sprinkle on top of the green beans for more crunch and flavor.
Green beans rock…easy, nothing sexy, but healthy and delicious.
