Gourmet Delights Without The Fuss & Expense…


Whether it is dress to impress or sauté to satisfy you can do it with style and not spend a lot.

Last week I whipped up Queen E’s matzoh meal latkes which are the same as blinis.

The recipe is easy and inexpensive.

Beat 4 eggs.

Add 1 1/2 cups Matzoh Meal. Believe it or not the Gluten Free is better. You can buy on Amazon. The latkes/blinis/pancakes are very light.

1/4 cup water.

1/2 cup milk or half & half ( I prefer the half & half)

Salt and ground black pepper.

Refrigerator for several hours. I always make mixture the night before. If it is too thick add 2 tablespoons of water or enough to make the batter loosen up.

I use an electric fry pan. I initially melt butter and then add more accordingly as it dissipates.

Cook on both sides until golden brown.

5 minutes a batch should do it.

Serve each latke/blini/pancake with a spoonful of creme fraiche and a generous serving of Tobiko on top of the blini.

Caviar can be costly. Grocery store fish eggs can be bitter. The tastiest and most affordable ingredient is Tobiko (flying fish eggs) which I buy at an Asian market. I paid $27 for over one pound which is a huge amount.

Serves at least 4.

With the leftover Tobiko I whipped up bow tie pasta and served with a Meyer Lemon zest, a dollop of creme fraiche and a large serving of Tobiko.

Additionally, I sauteed langoustine from Trader Joe’s with fresh leeks, a splash of white wine, fresh ground pepper and a sufficient dollop of butter and cooked until golden brown.

The pasta was truly outrageous accompanied by Sake…Michelin Star quality and can verify by polling my dinner guests.
