Fruitful…

Summer is a perfect time to get stoned.

With all the superb stone fruits and melons in the markets at reasonable prices I thought I would circulate a few ideas.

I have been grilling/pan searing peaches and the results are as delicious as chocolate.

Heat up your cast iron skillet at 500 degrees or place over a high flame for 5 minutes.

Cut a ripe peach into thick slices.

My cast iron skillet always has a vegetable oil coating on it. If you do not treat your pan then add a very thin layer of vegetable or canola oil in the pan and heat it up.

Place the peach slices in the pan for 2-3 minutes if the pan is very hot or until they have a nice char on them and then flip for 2-3 minutes.

The grilled peaches add so much flavor to salads, on top of a grilled white fish or chicken or for a delicious dessert served over yogurt, ice cream, sour cream or cottage cheese.

I garnish with pistachios, drizzle honey and add a mint leaf.

I also take my overly ripe fruits and melons and mix in the blender until liquified and add a heaping tablespoon of low-fat Greek yogurt.

Blend well.

No need to add milk or orange juice unless you want to.

It is such a delectable, refreshing energizing, low calorie drink. Also a great way to utilize fruit that is getting ready to retire yet still has great flavor.

As with so many of the top pros not playing in the US Open which starts Monday, people and fruit can can still be relevant when a bit overripe.

Delish…will try both. Hope all is well…..just , finally, got to visit my sister and her daughters. They were still in Lenox a much easier place for me to get to than NYC at this time. Nice to see family😊

    • Glad you were able to rendezvous. Hope they had a Covid free camp experience. You need to come and visit NYC. I will be there soon and stay until mid-January.
