Frittering Away My Days…

Living in Coronaville calls for worldwide sacrifice.

Many countries are in lockdown and dealing with economic crisis and great sacrifice.

Belgians are being ordered to rally around the spud morphing Belgians into Mr. Potato Heads.

Belgians are being asked to eat fries at least twice a week as more than 750,000 tons of potatoes are at risk of being thrown away.

The coronavirus crisis has led to a surplus of potatoes in the small European country, as demand for pommes frites, an amazingly delicious national dish of twice-fried potatoes, has slumped amid Belgium’s government-enforced lockdown.

Between the trump dictatorship and the lure of a daily diet of pommes frites I am investigating a move to Belgium as soon as restrictions are lifted.

Right now I would enjoy frittering away my days.

             Baked French Fries

1 Baked Potato. Wash and dry

Slice into 1/2” strips or circles

Place in bowl and drizzle EVOO, salt and ground pepper

Mix well adding additional EVOO if the potatoes are not covered

Place in 500 degree preheated oven on parchment paper covered baking sheet. If you do not have parchment then use cooking spray PAM on baking sheet

Bake for 20 minutes checking periodically until golden brown

Dip in mayonnaise or ketchup. Add horseradish to the mayo for a little kick.
