Caviar, Creme & Carbs…


Decadent and easy.

I adore caviar.

No matter the price point the taste is paramount.

I have experienced a wide range of caviars and found a deliciously smooth, flavorful caviar for the modest price of $17.99 for a 4 oz. jar.

I picked up LASCco caviar the other day at Gelson’s Market. I already had creme fraiche from Trader Joe’s in the refrigerator.

I was looking for a quickie dinner so I pulled some appealing items together…cannot beat caviar, creme and carbs.

I scrubbed, rinsed and partially dried 2 large baking potatoes and then rolled them in kosher salt.

I preheated the oven to 500 degrees and placed the potatoes on the wire rack, baking for 80 minutes to assure that the potato skins were very crispy.

I then halved the potato, mashed the innards, adding fresh ground pepper.

I dressed the potato with a dollop of Creme Fraiche and spread all over. Feel free to use liberally, if desired.

I then crowned the creation with a heaping tablespoon of caviar and thoroughly enjoyed the most luxurious baked potato ever.
