Cauliflower Bouquet…

Time is fleeting so let’s dive in as you may want to prepare a meal, pour a large glass of wine and revisit that dumpster fire, shit show presidential debate.

Make it easy on yourself and buy Organic Cauliflower Rice at Trader Joe’s (frozen or fresh).

Spray the pan with Olive Oil PAM or pour in enough vegetable oil to cover the bottom of the skillet.

Saute onions or shallots until golden brown, seasoning with kosher salt and fresh ground pepper.

Toss in fresh ginger thinly sliced and sauté with the onions or shallots.

Add the cauliflower rice.

Pour in 2 tablespoons EVOO.

Cook until the cauliflower is tender.

I cut up fresh asparagus and broccolini (I mostly use the stems), which both need about 3 minutes additional sauté time.

Add fresh (ends cut) snap peas. If you can buy at a farmer’s market, they are amazing. Sweet and crunchy. I snack on them uncooked all the time.

Add a sprinkling of feta cheese or parmesan before tossing in the snap peas and corn so it can melt down a bit.

Slice fresh corn off the cobb. It is important to only add the corn and snap peas for the last minute so they still have a crunch.

Shrimp, Corn, Cauliflower Rice Bowl

Tasty protein to combine are sautéed shrimp or cooked sliced chicken breast.

I also like to add fresh English peas.

Cooking time is approximately 20 minutes and feeds up to 4.

Garnish with lemon zest.

Easy, delicious, healthy and inexpensive.

    Looks yummy! Do you have to cook the corn at all? Or just slice it off the raw cob?
