It also doubles as latkes, but I shall not integrate church and state.
On New Year’s Day I whipped up an easy brunch loaded with fabulosity.
Caviar is an essential ingredient.
Whole Foods carries a variety of colorful (red, orange or black) caviar for $20.

You also need on hand:
Red or Sweet White Onion, diced
1 cup Capers
1 cup Creme Fraiche or Sour Cream
1/4 pound smoked Salmon (amount depends on number of guests)
Blini/Latke mix
- 1/2 cup Matzo Meal
- 4-5 Eggs
- 1/2 cup Milk
- Salt and pepper to taste
- Butter
Beat eggs, add milk, salt, pepper and 1/2 cup Matzo Meal.
Mix until you achieve a medium thickness.
Refrigerate for a minimum of 30 minutes. I usually prepare the night before.
Remove from refrigerator and check thickness. If thick, add water or milk to achieve medium consistency.
Heat skillet, add butter and spoon in tablespoon size portions of mixture.
Brown on both sides until golden brown, adding butter when needed.
Makes 20-25, 2 inch latkes.
You can also serve as a breakfast or dessert treat. Serve with sugar or maple syrup.

Great idea to use latkes. We usually use tiny boiled potatoes cut zin half with a little scooped out.
I think i will try making 2″ potato latkes in the future. great idea.
