A Hankerin’ For Halibut…

Quick…buy some wild halibut!

I have an easy, delicious recipe.

All you need is:

1 Lb. Wild Halibut

2 Tablespoons Honey

2 Tablespoons Melted Butter

2 Teaspoons Soy Sauce. I use Coconut Aminos because it is low sodium and I do not love soy sauce. You can order Aminos on Amazon.

1/2 fresh squeezed lemon. Love my $22 stainless steel lemon hand squeezer on Amazon. Squeezing is so fast and easy and look ma, no pits!

Ground black pepper to taste.

2 cloves garlic or 1/2 shallot minced. I am Team Shallot.

Combine all ingredients in small bowl and whisk or beat with a fork.

Pat dry Halibut and brush each side with marinate. Halibut should be firm, white with no fishy odor.

Refrigerate the Halibut or cook immediately.

Place a cast iron pot in a 500 degree oven for 15 minutes and then remove and place over high flame burner.

Place Halibut into hot, dry pan and brush on marinate.

Sear for 2 minutes on each side brushing marinate on every time you flip the Halibut.

Lower flame and grill  for another 2-3 minutes.

Voila, an amazing Grilled Halibut meal.

I served with a Caesar Salad and roasted potatoes.

I baked a russet potato for 1 hour in a 500 degree oven.

Let potato cool and then slice lengthwise and then cut each slice in half.

Heat some EVOO, kosher salt and ground pepper and optional, but delish, sauté onions and leeks for 10 minutes until turning golden brown then toss in cut up potatoes. I like to add fresh rosemary.

Cook and turn potatoes until potatoes are crispy…about 20 minutes.

I add a dollop of sour cream to the top of the potatoes.
