Whipped up a great salad recently.
I eat it 3-4 times a week.
I came across a recipe for a salad that Jennifer Aniston allegedly ate everyday on the Friends set.
It resonated. I took parts of it, eliminated a few ingredients and added my own personal spin.
It is easy and delicious.
Ingredients
- 1 cup cooked quinoa
- 1 cup Persian or mini cucumbers chopped
- ½ cup mint chopped
- ⅓ cup red onion chopped (let diced onion sit in cold water for at least 10 minutes and the onion bitterness vanishes!)
- ½ cup roasted and salted pistachios
- 1 15 ounce can chilled chickpeas drained and rinsed
- 1 Meyer lemon juiced (about 3 Tablespoons)
- ¼ cup extra virgin olive oil
- ground pepper to taste
- 3/4 cup crumbled feta cheese
I bought Trader Joe’s quinoa and followed the simple directions. Prep and cooking time is approximately 25 minutes and the prescribed serving size makes a huge portion of quinoa.
The recipe called for roasted salted pistachios. I did not have any so I used whole roasted and slightly salted cashews and they worked well. Moving forward, I usually use the roasted salted pistachios.
The onion, mint and cucumber dicing takes about 10 minutes.
I used Meyer lemons which added a bright, sweet taste and I also threw in the zest from 1 Meyer lemon.
Toss the mixture in a bowl and you have a fabulous salad. You must serve the salad chilled because garbanzo beans are much tastier cold.
Do not add EVOO until serving.
I recommend adding grilled salmon or grilled chicken on the top to make for a delicious meal.
